When the summer purification ceremony is over, We welcome
the summer in the air finally in Kanazawa too.
With plenty of crushed ice on plate, we prepare the summer dishes like
conger pike, octopus, fresh eggplant or sponge cucumber…

Let’s make a toast for sending wishes for longevity and good health.
It is 13th. September that Choyo-no-Sekku(Chrysanthemum Festival)in this
year. We prepare fatty pike conger and steamed matsutake mushroom
with Japanese broth in teapot.
Please come out for a stroll on viewing the moon. We look forward to seeing
you.

About TSUBAJIN

Before exploring the world of cuisine, many generations of the Tsuba family had been artisans of making Tsuba-sword guards in Kaga Province. In 1752, Jinbei Tsuba III opened a small restaurant besides his main business of sword guard making.
